"Cavan town sits in County Cavan, in the Border region of Ireland,roughly midway between Dublin and the northwest, and Church Street runs
through the middle of it, close to Market Square. Behind the Black Horse
Inn on that street is Luso, a restaurant serving sourdough Neapolitan
pizza and dry aged smash burgers to a town that, until fairly recently,
had comparatively little of either.
The pizza dough ferments for roughly three days before baking in a
stone oven, topped with Corleggy parmesan from Belturbet and rocket from
along the Annalee, both produced within the county. The burgers use dry
aged beef from Herd Butchery in Butlersbridge, a village a short drive
from the restaurant. A rotating craft beer selection and a short
cocktail list cover the drinks side.
Luso is open Thursday to Sunday evenings and currently holds 4.9 out of
